Red Velvet Cake with Cream Cheese Frosting

Red Velvet Cake with Coffee Recipe

It’s been decades since desserts with regular meal are considered important and the best part of the meal. Desserts are of many types but sweet, modified and baked cakes, covered with a lot of preparations, are the yummiest. In older times, cakes were nothing more than bread modifications but with time, they changed their taste along with their shape and style. I remember when I was a kid, my mom use to scold me of eating too much cakes she used to brought for parties and get-togethers and even on my birthdays but later on she learned from the internet and started to bake her own cakes and I was given full power to eat as much as I want because they were all homemade with all fresh and natural ingredients. I mean what else you want when you can bake your own cakes?
This recipe I’m going to share with you all is one of my most favourite one that not only tastes amazing but it also look hot and beautiful. Yes, I’m talking about ‘RED VELVET CAKE’. I think there is nothing more beautiful and yummy than a dense and colourful piece of Red Velvet Cake enriched with fluffy cream cheese frosting. This cake is unique in its own way. You can get hints of vanilla flavour paired up with dark chocolate with cream cheese and pure and natural buttermilk frosting. The vibrant and festive red colour of red velvet cake is ideal for holidays and thanksgiving parties, and even kids love the flavour and outlook of the cake. It would be amazing if you add strawberries or red cherries on it in additional.

Let’s have a look at procedure and ingredients:

Ingredients:

  • 2 3/4 cups (365g) all-purpose flour (whisk flour before measuring)
  • 1/4 cup (25g) unsweetened cocoa powder
  • 1 tsp baking soda
  • 3/4 tsp salt
  • 2 cups (403g) granulated sugar
  • 3/4 cup (6 oz) unsalted butter, softened
  • 1/3 cup vegetable or canola oil
  • 3 large eggs
  • 2 large egg yolks
  • 1 oz liquid red food coloring
  • 1 1/3 cups buttermilk
  • 1 Tbsp vanilla extract
  • 1 1/2 tsp vinegar

Ingredients for Frosting:

  • 12 oz cream cheese, softened
  • 6 Tbsp unsalted butter, softened
  • 6 Tbsp salted butter, softened
  • 1 tsp vanilla extract
  • 4 1/2 cups (560g) powdered sugar

Directions:

Take 3 round and 9 inch baking pans and cover the bottom of the pan with parchment paper and grease the bottom with butter and set aside while you prepare cake batter. Pre Heat the oven at 350 degrees.
Take a large bowl and add flour, salt and baking powder and mix accordingly. Now add cocoa powder in the dry mixture and mix well for about 30 seconds, to get even mixture.
In the container of an electric mixer fitted with the oar attachment (if using a part that doesn’t continually jam bowl, then stop the mixture infrequently throughout the whole mixing process and fix down sides and bowl bottoms), Now add butter and sugar in that bowl and mix together until you get a fluffy and pale mixture. Now add vegetable oil and mix again. Now add egg whites and blend each egg white at a time. Mixing this mixture until you get a smooth combined fluffy mixture. After you get this desired texture, add egg yolks one by one and run the electric mixture. When it is mixed properly, add red food colour and mix with spatula.
Now take a liquid measuring jar or cup and measure-out the buttermilk and add it into the bowl and combine with vinegar and vanilla essence and whisk together. Now work in 3 separate, foundation and ending with the flour mixture, add 1/3 of the flour mixture with 1/2 of the buttermilk mixture and mix until combined properly and you get an even mixture. Fix down sides and bottommost of the bowl with spatula to make sure everything is combined. Divide this mixture in already greased 3 pan, which we have prepared already. Spread an even layer in the pan and place in preheated oven for about 25-30 minutes and check with toothpick before getting it out from the oven (make sure the toothpick comes out clean). Remove the pans from the oven and let it cool for 10 minutes and take out the cakes from the pan in cake shelf. Prepare the cream cheese frosting and spread evenly on the one cake than place other half of the cake over it, spread more cream cheese and cover with the 3rd cake half and cover the whole cake with frosting and place in refrigerator and serve cool.

Cream Cheese Frosting:

Take a large bowl and add whip cream, butter and cream cheese in it and beat with electric beater until you get the smooth fluffy mixture. Now add vanilla essence and powdered sugar and beat again until mixed together properly. Spread this frosting evenly on the cake plus you can also prepare it before using and can place in refrigerator. (It is better to use this frosting when properly cool for better and smooth consistency).
